- COMPANY GUIDE
Kunihiro is a company that takes up the challenge of providing world quality tastiness from a global perspective, under the slogan “serving tasty food to your table.” The history of Kunihiro started from one oyster in Akitsu-cho, Toyota-gun, Hiroshima, Japan, in 1957.
We will continue to develop our business around “oysters” under our specific quality management system, committed to the themes of “reliability, safety and health.”
Message from the President
Always wishing that all people associated with Kunihiro will lead healthy, secure and safe, fulfilling, and happy lives through our oysters.
On behalf of Kunihiro, I extend my warmest greetings to you all. My name is Ikuzo Kawasaki, President of Kunihiro Inc.
, founded in 1957 when Kunio Kawasaki, the late President, started sales of raw oysters in Higashi-Hiroshima-shi (former Akitsu-cho in Toyota-gun).
With our main office currently located in Onomichi-shi, we ensure top-class offspring as an oyster manufacturer.
As shellfish, there is always a chance that oysters can cause food poisoning or through a natural occurrence possess a norovirus. However, Kunihiro has always received the seal of “reliability” and “trust” from local and loyal customers who enjoy eating our products and say “Kunihiro Oysters are safe and tasty” as well as from fish shops, supermarkets and restaurants which handle and serve our products. That is why we have been able to continue to be a top-class company for all of these years. I would like to extend my sincere appreciation to all of our customers.
We know that it is not only consumers eating our oysters but also Kunihiro’s employees, their families, suppliers, and myself as the management executive who are also the “customers who can benefit from Kunihiro.” Accordingly, Kunihiro always wishes healthy, secure and safe, fulfilling, and happy lives for all the people involved associated with our oysters, regarding all as our supporters.
I sincerely love my local city, Onomichi, and as currently the President of the Onomichi Tourist Association. I also have a mission to encourage Onomichi more than ever through oysters. It is my intention to continue to develop our company that will be admired and cherished by residents of Onomichi and all persons associated with us and our oysters.
Your continued patronage would be much appreciated.

President, Ikuzo Kawasaki
Top-class shipping volume of oysters (Kunihiro survey)
Providing only excellent oysters selected from among 5,000 tons of oysters, we are confident in their tastiness.
It is said that oysters produced in Hiroshima Prefecture account for 60 percent or more of the oyster volume shipped throughout Japan. With regard to shucked oysters, it is Kunihiro that handles one-fourth of the approximately 5,000 tons of oysters. Kunihiro is the only company that handles such a volume in Japan and its volume is top class (Kunihiro survey). In mail-order sales, we are especially confident in the tastiness of Kunihiro oysters because we only deliver carefully selected oysters of prime quality.
All products are packed by hand. Only high-quality products are delivered after checking each one by human eyes.
“Quality takes priority over efficiency.” This is the concept of Kunihiro’s method of production. Therefore, all products are strictly selected by skilled workers even now when Kunihiro has top-class shipping volume. We intend to deliver products of prime quality only together with the spirit of Kunihiro which places greater importance on quality than efficiency. To that end, we check each one by human eyes without entrusting such work to machines.
System to maintain highest quality
ISO9001 certified (introduced to Onomichi and Fukuyama factories)
HHazard analysis and critical control point (HACCP) certified (introduced to Onomichi factory and steamed oysters)
We provide true reliability and safety through complete quality management by a high-quality advanced inspection system. It is not surprising that we provide “tastiness.” Kunihiro regards the delivery of “reliability” and “safety” besides tastiness as important to provide products that will please our customers.
“Norovirus detection system” rare in private companies
Food poisoning incidents involving raw oysters, whose cause is considered to be due to noroviruses, have recently occurred. Noroviruses are detected by using polymerase chain reaction (PCR) assays. Under a situation that only a small number of public organizations can detect noroviruses, Kunihiro quickly introduced equipment for that purpose. Three to four samples are inspected by sea area per day.
As for “oysters,” the only marine products which are eaten fresh including internal organs, top priority is given to safety among others. Therefore, Kunihiro has established a complete quality management system with the establishment of a “quality management office” to perform receiving inspections and product sampling inspections every day. Self-management inspection is also reinforced with the establishment of a bacteria test room to detect bacteria that causes food poisoning. Recently, we have introduced analytical equipment which can measure amino and nucleic acids, vitamins and other food ingredients which serve as basic data. In addition, the quality management office has also established a “customer service department” to directly consult with customers by telephone.
“Shellfish poison inspection” using high-performance liquid chromatography, rare in private companies in Japan
Shellfish poison inspection is normally conducted using mice. However, food-handling companies cannot breed mice and public organizations take many days for inspection. Kunihiro therefore uses its own “high-performance liquid chromatography” to perform shellfish poison inspection. This is a shellfish poison inspection method developed by Tohoku University to inspect specimens with equipment. The presence of poisons can be inspected with ingredients and displayed graphically.
A “bacteria test,” duplication check performed from various perspectives in our company and public organization
We perform a bacteria test to check whether or not oysters are contaminated with Vibrio parahaemolyticus, salmonella bacteria, Staphylococcus aureus, or other bacteria which cause “oyster” food poisoning, etc. The test is performed by material lot and product lot according to the Food Sanitation Act.
A wide-range of items developed for mass marketers, consumer cooperatives, and the catering industry
In differentiation from other companies, we offer a “production area, reliability, safety, health, and tastiness” as the most powerful strengths of Kunihiro. Through our equipment and systems for inspection, production, and development, this differentiation from other companies is clearly demonstrated. In such a manner, we have developed our proposal-type business to mass marketers including supermarkets, consumer cooperatives, and the catering industry. Furthermore, our Sales Department and Development Department jointly develop products based on information from our customers. Sales bases located in Tokyo and Osaka cover markets from Hokkaido to Okinawa.
Business of “GENNAITEI,”(Japanese style Oyster-cuisine Restaurants) an antenna shop to seek market needs
Integration with different industries or different products is also actively developed. “GENNAITEI” located in five AEON shopping centers in Chugoku and Shikoku regions, is a store that serves as a role as an antenna shop for market needs and to expand the market. We sell handmade daily fish dishes with a focus on eel, which enjoys popularity among a wide age group of customers.
Just-in-time shipment system to preserve freshness above all else
Freshness means everything for Kunihiro’s products including “raw oysters.” We have established our unique cold-chain system. We make it a policy to ensure delivery of our products at the earliest possible time maintaining a product temperature at 5°C in refrigerators. We deliver products anywhere in Japan from Hokkaido to Okinawa at the requested time according to need.
